Asian Greens

This weeks selection of greens includes a variety of Asian greens and spinach. These are one of the best parts of the spring share! They make a delicious salad when paired with red and orange peppers, purple onion, and  fresh oranges, all sliced very thin. Add sliced almonds and try this delicious dressing. You can add chicken breast or tofu if desired. Make an extra batch of dressing and marinate the chicken or tofu for even more flavor!

  • 3 tablespoons Tamari or soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon orange juice
  • 1 teaspoon sesame oil
  • 1 teaspoon toasted sesame seeds      

 Mix well together and toss with greens! Enjoy!

You can also try lightly stir-frying your greens with other veggies of your choice and mixing with basmati, or your favorite rice. Top with the dressing for a delicious change of pace! For an impromptu mo-shu wrap, spread hoisin sauce over a multi-grain tortilla, add the warm rice mixture, roll, and enjoy!
