This week's share will give you plenty of opportunity to go green! You will find in your bag assorted micro greens, lettuce, garlic scallions, onions, mint, oregano, snow peas, and radishes! Your micro greens may include broccoli, sunflower, daikon, or pea shoots. If you are new to Goldwood Gardens CSA these micro greens may be new to you. Our assortment of these tiny, but super flavorful greens is one of the things that makes our CSA shares unusual. You can use them mixed in with your salad, on your wraps, in your stir-fry, or blended into your pesto. Try our favorite new pesto recipe to get started!
Cilantro Pesto with Sunflower Shoots
4 cups of spinach
1 cup cilantro
2 garlic scallion, or regular scallions, chopped
1/3 cup sunflower seeds
2 raw garlic cloves
juice from 1small lime
1/3 c water
1/2 tsp salt or more to taste
Put all ingredients in your food processor or blender and pulse until well blended.
You can use this bright green pesto for so many things! Try spreading on a wrap and adding lettuce, onion, red pepper, and black beans. Top with more pesto, wrap and eat! Delicious! You can also use it like a salad dressing. Try mixing cooked rice, corn, pinto beans, red and orange peppers, avocado, and this pesto for a delicious cold rice salad! Serve the rice salad on a bed of your fresh lettuce and you have a delicious healthy meal. You can also blend it in with avocado for delicious guacamole or with chickpeas for a zesty cilantro hummus. The possibilities are ENDLESS!
They say people either love or hate cilantro! We fall into the LOVE category but if you don't, just leave the cilantro out and replace with parsley. Switch the lime juice to lemon juice, and you have a delicious new pesto. Mix with softened cream cheese for a great summer bagel spread. Don't forget to post your own unique pesto creation.
