This week there will be countless options for delicious, healthy recipes to make with the produce in your share. You can look forward to arugula, lettuce, onions, and collard greens. We hope these will make great additions to your Easter menu. I am going to be making a salad topped with this delicious dressing.
Juice from one can of mandarin oranges-reserve oranges to add to salad.
2 tablespoons balsamic vinegar
2 tablespoons apple cider vinegar.
2 tablespoons honey-We use Ide's Honey Farm
1 clove garlic, peeled
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
Combine all ingredients except olive oil in blender and mix well. Pour olive oil in last, while blender is running. This is a delicious marinade too! I make the salad with lettuce, finely chopped scallions, chopped almonds, and the mandarin oranges. Beautiful, easy and delicious!
