Greens and Goat Cheese Stuffed French Bread

This week I have had approximately 6 hours of sleep, 11 kids, several meetings, 2 birthdays and not a lot of time to make dinner. This stuffed french bread was a perfect solution.

Greens and Goat Cheese Stuffed French Bread

1 loaf of french bread-sliced in half and

Chopped mixed greens-I used Swiss Chard, arugula, and spinach
1 onion sliced
2 cloves of garlic finely chopped
5 basil leaves finely chopped
balsamic vinegar for drizzling

Cut french bread in half and scoop the inside of the bread out. Tear into pieces and put aside. Brush the inside of the french bread with olive oil and place in 400 degree oven for 5-7 minutes until inside of the bread is just toasted. Meanwhile, heat 2 tbsp of olive oil in pan over medium heat and add the onion. Let cook for 5 minutes and add garlic. Cook for 5 more minutes and add chopped greens and reserved bread pieces.  Cook until the greens are wilted and then stir in basil. Place filling in toasted bread loaf and top with goat cheese. Return to oven for 7-9 minutes or until cheese is soft and starting to brown. Remove from oven slice and drizzle with balsamic vinegar right before serving. You can of course change this recipe any number of ways. My husband thinks that Italian sausage would be perfect. My daughter thinks that chicken breast would be better. I think that grape tomatoes and roasted chickpeas would be outstanding! Olives and Feta cheese always make everything delicious, so the sky is the limit! My kids devoured this and my sister who doesn't like greens or goat cheese wanted a second helping!
