Going, Going, Gone! That's what we are saying about our summer shares and that's what you'll be saying about this week's Dandelion Green Pesto. It is so easy, and so delicious.
Dandelion Green Pesto
1 bunch of dandelion greens, bottom stems trimmed, and leaves rough chopped
1 cup of spinach leaves
1 spring onion
2/3 cups almonds or walnuts
1 tbsp nutritional yeast, or 1/4 cup Parmesan cheese
1/2 cup olive oil
1/4 cup water
1/2 tsp salt
Pulse in food processor until well blended. This is amazing on top of eggs! Try making an egg sandwich that is worthy of breakfast in bed. Toast your choice of bread, bagel, or english muffin. Spread the pesto on the bread, add a slice of sharp white cheddar cheese, place your fried egg on top and ENJOY! Of course this pesto is also fabulous on pasta, or spread on a pizza crust.
Asparagus Garlic and Onion Saute
1 bunch of asparagus, bottoms trimmed
2 garlic cloves finely minced
2 green onions finely chopped
2 tbsp butter or olive oil
Place butter or oil in pan and heat, Add asparagus, onion, and garlic and stir until asparagus is crisp tender. Simple, easy and delicious!
