Two Thumbs Up Cashew Salad
1 1/2 cups of chopped cashews
1 cup chopped pea shoots
1 cup chopped snow peas
1/2 cup chopped green onions
1 1/2 tbsp chopped fresh dill
2/3 cup mayo
1/3 cup plain Greek yogurt
juice of 1/2 lemon
Add 1 1/2 cups of chopped shrimp,
chicken, or chickpeas if desired
Mix all of the ingredients together and let chill. You can serve on a bed of lettuce, wrapped in lettuce leaves, or as a sandwich. It is perfect for a Sunday morning brunch served on croissants lined with spinach. Yum!
If you really want to use all of your weekly items try adding 1 cup of cooked brown rice to this salad! If you have never had a cold rice salad I think this recipe will make you a convert!
If you haven't thought of a way to use your brown rice yet, make sure you click here for our recipe for perfectly cooked brown rice. While your rice is cooking saute your kale and green onions in 1/2 tbsp olive oil, don't forget to add a chopped garlic clove! When your kale is soft stir in a can of drained black beans and add a container of fresh salsa. Remove from heat and add 2 cups of rice. Spread rice mixture between 2 tortillas, sprinkle with cheese if desired and heat in skillet until each side is browned. Cut into wedges and serve with guacamole! Easy and so good!
