Box of Opportunity!

Thumbelina carrots, turnips, kohlrabi, lettuce, squash, onions, and rosemary. This week your share truly is a box of opportunity. You may not have each item but whichever blend you receive can be made into countless variations. I am making a taco mixture first. Simply roast your carrots, onions, kohlrabi, turnips and squash. These thumbelina carrots need only to be washed, NOT peeled! Drizzle with olive oil and sprinkle with salt, cumin, and a few red pepper flakes.  Roast at 450 for 15-20 minutes, or you can wrap in foil and place in the grill. This is a great way to keep the heat in the backyard and out of the house! When you open the foil squeeze fresh lime juice over the veggies. Add 1 can of drained black beans, 1 tbsp chopped fresh cilantro, and 1/2 cup fresh salsa to the veggie mixture. You can use this medley to turn your lettuce into taco salad, or you can stuff it into grilled corn tortillas. Of course this blend can be changed to suit the changing produce, and your changing mood! Add corn, tomatoes, broccoli, cabbage, even potatoes as they come into season. Chicken breast seasoned and shredded can be added too. If you are not feeling like Mexican food try using your veggies and your fresh rosemary as a delicious complement to a slow-cooked beef roast. Add a couple of chopped fresh tomatoes if you have them and a splash of red wine. Slow cook all day while you're at work and come home to the amazing smell of dinner already made. Serve the roast with fresh crusty bread, and a salad made with lettuce and carrot greens. No matter which way you choose, you can't go wrong!
