I know Tuesday Evening Pasta is a funny name for a recipe, but it suits this one perfectly. This is my go to recipe for the day before my next share of produce comes. It works so well to use the rest of the produce I have before more comes along the next day. Of course like all of my favorite recipes, you can change this for whatever kind of produce you have around! If you don't have or don't like tortellini, no problem, try the pasta of your choice, or rice, or millet, or cous cous, or potatoes...you get the idea! :)
Tuesday Evening Pasta
Produce of your choice sliced, diced, or chopped the way you like it. For this I used peppers, onions, garlic, yellow squash, zucchini, tomatoes, and green beans. Heat olive oil in a skillet over medium-high heat and add all but the garlic. Stir often and add the garlic after 5 minutes. Let cook another 5 minutes and then add 1/2 cup water or chicken broth. Add a bag of frozen mini-ravioli or tortellini. Do not cook the pasta first. Cover and cook until pasta is warmed through and veggies are caramelized. Remove from heat and spritz with fresh lemon juice, add a few shakes of red pepper flakes, and top with shaved Parmesan cheese if you feel like it. Easy and delicious! If you are not using frozen pasta, cook pasta according to directions. It is delicious served like this, or you can stir in a little tomato sauce, or pesto, or basil vinaigrette. YUM!
