If you are anything like me you have probably found yourself needing to make dinner and looking at your produce basket and thinking.."Seriously, zucchini and yellow squash, peppers, and tomatoes again????" I feel like writing a book entitled 1001 Things to Make With The Same Summer Staples. All joking aside, I have found so many delicious things to make with these items this year that I can hardly get enough! :) This dish is one of my favorites.
Summer Staple Pasta
Boneless chicken breast-cut into small strips, or use leftover chicken
1 summer squash
2 peppers, your choice
green, or any color, beans
chopped greens if available, I used Swiss chard
1/2 c white wine
tomatoes, basil, garlic, onion, 1 tbsp balsamic vinegar and salt-pulsed in your blender
Pasta of your choice
Fresh Mozzarella cheese if desired
Cook pasta according to directions. Heat 2 tbsp of olive oil in a large skillet. Add the chicken breast and sprinkle with salt and pepper. When chicken is nicely browned, remove from heat and add the zucchini, yellow squash, peppers, greens and beans to the pan. When they have softened, add the white wine and stir. Then add the tomato mixture from the blender. Add the chicken and pasta. Stir well and let simmer until the tomato mixture has reduced. Top with fresh Mozzarella and place under broiler until cheese is just melted.
